2024-02-14 13:12:33 +0000 UTC View PostVariety Spotlight: Semillion (Sem-me-yawn) (Sem-ah-Lynn) Take your pick, either way works This grape is deeply rooted in Bordeaux, France where it is used as the backbone of some of the tastiest dessert wines around, called Sauternes. It is also used to make a dry white wine- usually very crisp, full of citrus notes and can sometimes be quite floral on the nose. Historically, Semillion has been used as part of a blend- either for dessert wines or for dry wines, but it is having a spotlight moment right now. Look for producers in the US (California), Argentina, Chili, New Zealand & South Africa exploring and having fun with this tasty little grape by bottling it up as a stand alone, single varietal wine. We can either let it be tamed or set it free. -Where The Wild Things Are Wild wines, AKA native yeast fermentation, is a category of wines you need to try. They take advantage of the indigenous yeast populations that exist out in the vineyard and come into the winery on the grapes. The yeast will kickstart the fermentation, and if handled properly can go the distance until all of the sugars are turned into alcohol. A lot of producers will “pitch” in commercially produced yeast to take over the native yeast so the fermentation is strong, with less risk of it going sideways. Native yeast wines require more effort and a greater tolerance for risk, but the resulting wines are set free to express the nuances of their true terroir. It’s time to see the wild side! 🔥

Vineyards that used to be scorched Earth are now teeming with wildflowers and buzzing with bees as the soil comes back to life. There is a dynamic world of intrigue deep within the soil and when it is enhanced, rather than suppressed, the wine takes on a unique personality that can only be tied back that specific place. Vineyards are like people. Each one is unique! And, the ones that are Down To Earth are the ones that will Blow Your Mind- in so many ways. 🦋

We use the same tool in wine tastings. Wrapping the bottle in a brown paper bag and tasting out of a dark glass really allows you to evaluate the bouquet and the flavors of a wine without any preconceived opinions that you will form as you see details on a label and the color in your glass. Sometimes you have to remove it all to really assess how great it is. Think of it as a blindfold for your senses.🍷

It is a cross between Cabernet franc & Sauvignon blanc and is loved for its sumptuous, fruity and deeply concentrated flavors. The best Cab's are coming from California, Bordeaux, and the Maipo Valley in Chile. It is not uncommon for extremely high-end Cabs or Cab blends to come out of these regions, often with hefty price tags and the ability to go the distance in your cellar. These wines are full bodied and pair quite well with grilled meats and rich sauces. The primary tasting notes are black cherry, currants, baking spices, cedar, dark chocolate and peppercorn. TASTY! This is true for 2 reasons: At the end of the day, when you taste wine for your job, you actually really want a beer, instead. And, during peak times of the season, like crush and bottling, winery crews will often spend very long days for extended periods of time away from home. Beer has a way of making this stressful time a bit more relaxed and easy going. So- Cheers! Salud! Raise a beer, a glass of wine, a cocktail of your choice. Life is meant to be enjoyed. Some are over vintaged in barrel even longer than that, taking around 24+ months. Get yourself a taste. Be sure to savor it & appreciate it’s raw perfection!

The exact origins are unclear, but evidence suggests that production began around 7000 BC and definitely by 6000 BC. That’s a long time of humans experimenting and perfecting their grape growing and winemaking techniques! Today, wine has never been better. And, it brings me great joy to be a part of the journey 🍷

These often include fruity notes like raspberry, cherry, strawberry, as well as floral or herbal accents. High tones often contribute to a wine's freshness and can be associated with its acidity and mouth watering sensation. In my opinion these wines are full of energy, lifted, and fresh! This is what I look for. ❤️🍷

However, most of the detailed tasting experience occurs once the wine enters your mouth and interacts with your taste buds and sense of smell. Everyone has a different ability to taste, and everyone will experience a wine in a unique way.
