Caribbean rice and black eye beans cooked in coconut milk(not from a tin but an actual coconut I cracked, blended and milked 😜) then cooked in a rich spicy stew. Roasted chicken legs marinated for 36 hours in tarragon, thyme, mint, lemon plus salt and pepper. Cooked a lot so I can have extras for the next few days. Now going to eat whilst watching Pirates of the Caribbean and get my much needed sleep
