

Raw Berry Lime “Cheesecake” cupcakes 💜🍓🧁 ✨CRUST: 1 cup raw almonds or walnuts (I subbed organic flaxseeds) 3 soft medjool dates, pitted (soaked in water) 1 table spoon maple or agave syrup 1/2 tbsp coconut oil (if needed) 1/4 tbsp (cinnamon)n ✨STRAWBERRY LIME LAYER 1 1/2 c soaked raw cashews (again we substituted organic flaxseeds) 1 lb fresh strawberries 4 limes, squeezed 1/2 cup pure maple / agave syrup 1 tsp vanilla extract Pinch Himalayan salt ✨BLUEBERRY LAYER: 1 cup blueberries 1 tbsp coconut oil ✨DIRECTIONS: Place all crust ingredients into a food processor. Lightly process, making sure not to over blend. Should look like a crumble. Press down into a 6” springform pan. Place in the refrigerator to set. Blend all filling ingredients into a smooth mixture in a high power blender. Pour over crust. Blend blueberries and coconut oil. Pour over strawberry lime layer. Garnish however you want. Chill six hours or overnight for best results. Thaw for up to an hour in fridge. Enjoy!
