Smoked Apple/Maple Pork chops:
Your favorite (or most economical ) cut of pork chops
1 cup of apple sauce
Half a cup of water
1 tablespoon of maple syrup
1 tablespoon or so of salt (according to preference, taste test first!)
Half a teaspoon or so of black pepper to taste (also according to preference)
1 teaspoon of Smokey BBQ sauce (or your favorite kind)
Optional: 1 teaspoon of white cooking wine, regular white wine (or *half* a teaspoon of white wine vinegar because it's more sour)
Half a teaspoon of butter or plant butter (one full teaspoon of pork is a very lean, dry cut)
1/3 or so of an onion, chopped
Three or four garlic cloves sliced, chopped or grated (or a a teaspoon of garlic powder or paste)
Stir ingredients in saucepan and heat to a medium/ high level and bring to a simmer/ boil, stir and add chops, flip over/baste the chops with the sauce a couple times then cover with a lid and turn down to medium or a little lower depending on how hot your stove gets. Flip your timer on to 20 minutes, and continue to simmer the chops well periodically stirring and basting them until they are done. If sauce begins to evaporate too much, turn your stove even lower and or add a little water as needed. Serve basted in a little of the sauce. You can always save some of the sauce and throw in some frozen green beans, or cauliflower or other veggie mix and saute for 10 to 15 minutes for flavored veggies on the side. You can even add some cooked rice to it, or serve potatoes on the side:)
